Polish style cottage cheese

Let us begin our culinary adventure with something simple and very versatile.My childhood staple spread for breakfast is one of my favourite of all time.

In Poland we eat salty breakfast on principle. This light spread tastes best with fresh spring ingredients like radishes, chives or other herbs (basil, mint, dill).

To make it you’ll need:

  • 200 g of Philadelphia style cheese or if you can find fresh cow cheese
  • 6 big radishes
  • A Handful of chopped chives
  • A pinch of salt
  • Ground pepper
  • A pinch of curry powder ( optional )
  • A tablespoon of sour cream

To make the cottage cheese simply put all ingredients in a medium size bowl and mix them well together with a fork, the spoonful of sour cream helps to combine the ingredients. You can prepare the spread night before and leave it overnight in the fridge so the taste will have time to develop.

Next morning simply cut nice slice of bread, even better lightly toasted, spread the cheese on top and indulge. 

You can also put slices of hard boiled egg, fresh cucumber, slice of smoked salmon or trout, or fresh tomato (when in season) on top of your sandwich for even better flavours.
